Junior Mint Coffee

I made a delicious morning coffee today.  It may not be a new invention but it was for me.  If you like Junior Mint candy and coffee you will love this.  Brew your favorite cup of Joe but nothing fancy or flavored just plain coffee.  Then grab your favorite mug and add four Junior Mints to the bottom.  Pour coffee into your cup and add a spoon of sugar.  Finally, stir and enjoy!


Stuffed Breakfast Peppers


4Bellpeppers various colors

5 Scrambled Eggs

½ cup Cottage cheese

½ cup Ricotta cheese

¾ lb Mild Breakfast sausage

1 Diced Tomato

½ Diced Onion

¼ cup Sliced mushrooms

Sour Cream

Green Onions


Preheat oven to 350 degrees.  In a skillet brown sausage, drain and set aside.  Next, sauté tomato, onions, and mushrooms once caramelized add eggs and scramble to make an exploded omelet. Then, make cheese mixture by combining cottage cheese and ricotta cheese.  Finally cut the tops off of bell peppers and set aside then remove the seeds and insides of the peppers.  Complete by layering the inside of the bell peppers in the following order sausage, egg, cheese, and repeat once or twice.

Place stuffed peppers in the oven for 20 minutes.  Remove and top with shredded cheddar cheese and place back in the oven for 10 minutes.  Remove peppers top with sour cream and green onions and serve hot.
